Rainbow Chard, Potato, and Carrot Soup

Ingredients

1 1/2 lbs Swiss Chard

2 cups Russet potatoes ( peeled and cut into 1/2 inch cubes)

1 cup carrots peeled and sliced

To taste Salt and black pepper

6 cups water

2 plus teaspoons butter

Preparation

  1. Chop swiss chard leaves should be about 8 loosely packed cups

  2. Add all vegetables to a large heavy bottomed pot and season with salt and black pepper

  3. Add water and bring to a boil

  4. Cover and reduce heat to a simmer

  5. Simmer for aproximently 20 minutes or until the potatoes are tender

  6. Puree hot in small batches making sure to only loosely cover your blender so pressure doesn't build

  7. Serve with 1 teaspooon of butter on each bowl

  8. Enjoy!
