Ingredients
Salad Base
6 cups Power Salad Blend
2 Apples
1/2 cup dried cranberries
2 cups cooked chicken,cubed
Vinaigrette
1 clove garlic, minced
1 small shallot (or one lobe of a large), peeled, cored and quartered
1/3 cup extra-virgin olive oil
1/4 cup apple cider vinegar
2 teaspooons Dijon mustard
2 teaspoons honey
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
Preparation
1.Cut power salad blend to desired size
2. Cut and core apples to bite sized pieces
3. Place remaining salad ingredients in large bowl for tossing
4. Add vinaigrette ingredients in blender and process until smooth and creamy in apperence.
5. Toss salad with dessired amount of dressing gently
6 Serve and enjoy
